It's So Easy Being A Green Sandwich

I got the idea for this sandwich from a pizza that had pesto, goat cheese and cucumbers. I love to make wraps and sandwiches for my family because I can cram a bunch of different veggies with an array of different vitamins into one sammy.

There are a lot of goat cheeses out there - it seems like every country has one. Our local co-op, Bloomingfoods, usually has a little basket of cheeses for less than $3; this is a great way to explore new cheeses you have never had before.

This sandwich is a perfect mix of creamy and crunchy - what more could you ask for in a sandwich.

I'm using the last of my homemade pesto frozen from the summer, but there are lots of great store-bought and inexpensive pestos.

Ingredients (per sandwich):

  • Goat Cheese - about 1 oz.
  • 5 slices of cucumber
  • 1/2 an avocado
  • 1/8 - 1/4 cup broccoli sprouts
  • 1/8 - 1/4 cup lettuce
  • 2 tablespoon pesto
  • 2 slices of bread
