Chef D's Apple Sage Elixir

Chef Daniel Orr says this beverage is as nuanced and sophisticated as a glass of wine. We'll let you be the judge when you try it for yourself. It's quite simple to prepare.

Enjoy it over ice after a hike in the woods on a warm September day. When the weather turns cool, take in the warming flavors of apples and sage in a steaming hot mug. It's hot apple cider, with a twist.

Chef D's Apple Sage Elixir

Ingredients

  • 1 quart filtered apple juice (use 100% juice, and not cider)
  • 4 large sprigs of fresh sage
  • 6-8 slices of fresh ginger (no need to peel)
  • Additional spices such as cloves, peppercorns, turmeric, as desired
  • lemon wedges (for garnish)

Instructions

  1. Combine all ingredients but the lemon in a medium sauce pan.
  2. Heat to boiling, then reduce heat and allow to simmer at the lowest setting for 20 minutes or more.
  3. Strain through a mesh sieve.
  4. Serve hot or cold and garnish with lemon, if desired.
