Poke Greens with Country Ham And Cracklings

Poke is one of my springtime favorites, but you must go through several steps of preparation to make it edible.

1. Pick when very young. Not over 8-10 inches tall

2. Remove any roots and clean well.

3. Bring a large pot of water to a boil and salt to the point that it taste like sea water.

4. Parboil for about 8-10 minutes then drain and rinse well.

5. Repeat step 4 to remove any excessive Vitamin A from the leaves.

6. Shock in ice water and refrigerate until needed
